    2 cans artichoke hearts, drained and quartered (14 oz. each)
  • ·
    1 1/2 tbsp. lemon juice
  • ·
    4 cups cooked chicken, cubed
  • ·
    12 oz. fresh mushrooms, sliced, sautéed and drained
  • ·
    1/4 cup margarine
  • ·
    1/4 cup flour
  • ·
    1/2 t. salt
  • ·
    1/2 t. dried thyme
  • ·
    1/4 t. ground nutmeg
  • ·
    2 cups milk
  • ·
    1 chicken bouillon cube
  • ·
    1 1/2 cups shredded cheddar cheese
  • ·
    1/3 cup crumbled blue cheese

How to Make Gourmet Chicken and Artichokes


  1. Place artichoke hearts in shallow baking dish; sprinkle with lemon juice. Add chicken and mushrooms. In a pan, melt margarine; add flour and seasonings. Cook until frothy. Stir in milk and bouillon; cook until thickened. Stir in cheeses until melted. Pour over chicken. Bake at 350 for 35 minutes. Serves 6 to 8
