This is from my old cookbooks,also. Can't remember which one, though.

Ingredients

  • - 2 cans artichoke hearts, drained and quartered (14 oz. each)
  • - 1 1/2 tbsp. lemon juice
  • - 4 cups cooked chicken, cubed
  • - 12 oz. fresh mushrooms, sliced, sautéed and drained
  • - 1/4 cup margarine
  • - 1/4 cup flour
  • - 1/2 t. salt
  • - 1/2 t. dried thyme
  • - 1/4 t. ground nutmeg
  • - 2 cups milk
  • - 1 chicken bouillon cube
  • - 1 1/2 cups shredded cheddar cheese
  • - 1/3 cup crumbled blue cheese

How To Make gourmet chicken and artichokes

  • Step 1
    Place artichoke hearts in shallow baking dish; sprinkle with lemon juice. Add chicken and mushrooms. In a pan, melt margarine; add flour and seasonings. Cook until frothy. Stir in milk and bouillon; cook until thickened. Stir in cheeses until melted. Pour over chicken. Bake at 350 for 35 minutes. Serves 6 to 8 Source: My Old Cookbooks
