Ingredients
- - 2 cans artichoke hearts, drained and quartered (14 oz. each)
- - 1 1/2 tbsp. lemon juice
- - 4 cups cooked chicken, cubed
- - 12 oz. fresh mushrooms, sliced, sautéed and drained
- - 1/4 cup margarine
- - 1/4 cup flour
- - 1/2 t. salt
- - 1/2 t. dried thyme
- - 1/4 t. ground nutmeg
- - 2 cups milk
- - 1 chicken bouillon cube
- - 1 1/2 cups shredded cheddar cheese
- - 1/3 cup crumbled blue cheese
How To Make gourmet chicken and artichokes

Step 1Place artichoke hearts in shallow baking dish; sprinkle with lemon juice. Add chicken and mushrooms. In a pan, melt margarine; add flour and seasonings. Cook until frothy. Stir in milk and bouillon; cook until thickened. Stir in cheeses until melted. Pour over chicken. Bake at 350 for 35 minutes. Serves 6 to 8 Source: My Old Cookbooks
