Ingredients

  • CHICKEN AND SAUCE
  • 1 pound chicken breasts without skin or bones
  • 2 1/2 cups chicken stock
  • 4 tablespoons butter
  • 1 medium onion, chopped
  • 6 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 1/4 cup dry white wine
  • 1 cup heavy cream
  • 2 bay leaves
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons basil, chopped
  • FILLING AND NOODLES
  • 10 ounces goat cheese
  • 1 1/2 cups mozzarella cheese
  • 1 cup grated Parmesan cheese, divided
  • 1 large egg, beaten
  • 1 lemon, juiced and zested
  • 1 clove garlic, minced
  • 1/4 cup pine nuts, toasted
  • 2 teaspoons fresh oregano, chopped
  • 1/2 cup sun dried tomatoes, chopped
  • 16 no boil lasagna noodles
  • fresh basil for garnish

How To Make goat cheese chicken roll-ups with sun-dried tomatoes

  • Step 1
    Place chicken and broth in a large pot. Bring to a boil and simmer. Cook about 12 minutes. Remove the chicken and place the broth in a measuring cup. Let the chicken cool a bit, then shred it into pieces.
  • Step 2
    Wipe the pan out and add the butter, and let it melt. Add the onion and cook for about 10 minutes. Stir in the garlic cook for 30 seconds. Stir in the flour and cook 1 minute. Add the wine and bring to a simmer. Simmer about 1 minute.
  • Step 3
    Whisk in the reserved stock and heavy cream. Add the bay leaves and cook for about 10 minutes. Whisk in the Parmesan and basil. Season with salt and pepper. Remove the bay leaf and set aside.
  • Step 4
    In a large bowl, combine the goat cheese, mozzarella, 1/2 cup Parmesan, egg, lemon zest and juice, and garlic. Gradually add 1/2 cup of sauce to the cheese mixture, then fold in the chicken, pine nuts, oregano, and sun-dried tomatoes.
  • Step 5
    Add the pasta sheets to boiling water and let them soak for 5 minutes. Preheat the oven to 350 degrees.
  • Step 6
    Spread 1 cup of sauce over the bottom of a 9 X 15 pan.
  • Step 7
    Place a mound of cheese mixture at the end of one pasta sheet.
  • Step 8
    Roll them up and lay them in the baking pan. Pour the remaining sauce over all the noodles.
  • Step 9
    Place foil over the pan and bake for about 35 minutes.
  • Step 10
    Remove the foil and sprinkle the remaining Parmesan on top. Garnish with basil.
