Ingredients
- 4 ounces bean thread noodles or aka glass noodles
- 1 large boneless skinless chicken thigh
- 6 large uncooked shrimp peeled and deveined
- 2 tablespoons olive oil
- 2 scallions chopped
- 2 cups water
- 2 tablespoons lemongrass paste
- 1 tablespoon lime juice
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1 tablespoon water
- 2 tablespoons brown sugar
- hoisin sauce, roasted crushed peanuts and cilantro for garnish
How To Make glass noodle salad

Step 1Place the noodles in a bowl and cover them with cold water and let sit for 1 hour. Drain.

Step 2Place the chicken and shrimp on a cutting board and chop with chef's knife until the meat is well minced.

Step 3In a pot add the 2 cups of water, the lemongrass paste and 1 tbsp lime juice and bring to a boil

Step 4Add the oil to a skillet. Add the garlic and scallions and cook 1 minute. Add the meat and cook until no longer pink.

Step 5Place the noodles in the pot with the lemongrass water. Boil about 1 minute and drain again.

Step 6Add the noodles to the meat. Mix the fish sauce, lime juice, and brown sugar together and pour over the noodles. Cook and stir until well incorporated.

Step 7Top with peanuts, cilantro and drizzle with hoisin sauce
