Ingredients
- GINGER SCALLION PESTO
- 1 cup scallions sliced
- 2 tablespoons ginger grated
- 1 teaspoon salt
- 1 cup vegetable oil
- CHICKEN
- 4 boneless chicken thighs
- salt and pepper
- LEMON GINGER SAUCE
- 1 lemon juiced and zested
- 2 tablespoons honey
- 1 tablespoon grated ginger
- 1 cup chicken stock
- 2 tablespoons cornstarch
- 4 tablespoons water
How To Make ginger scallion pesto chicken w lemon ginger sauce

Step 1To make the pesto. Add the scallions, ginger and salt to food processor. Turn on processor and drizzle in the oil. Process until well blended. Place the chicken pieces in the pesto and let marinate 1 hour.

Step 2Remove chicken from marinade and broil turning and basting with the pesto until no longer pink inside.

Step 3For the lemon ginger sauce. Combine the lemon juice and zest, honey, ginger and chicken stock in a small saucepan. Bring to boil. Mix the cornstarch with the water. Whisk it into the sauce mixture to thicken.

Step 4Serve the sauce with the chicken
