This is my entry for the Ninja Chef's Challenge using Chicken Breast, Ginger, and Avocado. I absolutely love Asian cuisine and when I saw the ingredients for the challenge my thoughts automatically went to making something with an Asian flair. This was so good and healthy for you too!

Ingredients
- DRESSING
- 2 tablespoons rice vinegar
- 2 tablespoons light brown sugar
- 1 1/2 tablespoons soy sauce
- 1 tablespoon Sriracha sauce
- 1 1/2 teaspoons fresh ginger, grated
- 1/4 cup canola oil
- pinch salt
- SALAD COMPONENTS
- 11 ounces canned mandarin oranges, drained
- 6 cups cabbage, shredded
- 2 cups cubed or sliced cooked chicken breast
- 1 large firm-ripe avocado, pitted, peeled, and cubed
- 4 - green onions, trimmed and sliced diagonally
- 1/4 cup chow mein noodles
- 2 tablespoons sesame seeds, toasted
How To Make ginger mandarin chicken salad with avocado

Step 1In a bowl, whisk together vinegar, brown sugar, soy sauce, Sriracha sauce, and ginger. Slowly drizzle in oil, whisking constantly. Season with salt. Set dressing aside.

Step 2In a large serving bowl, toss cabbage and chicken with dressing.

Step 3Top with avocado, orange slices, and chow mein noodles, then garnish with green onions and sesame seeds.
