This is my entry for the Ninja Chef's Challenge using Chicken Breast, Ginger, and Avocado.

I absolutely love Asian cuisine and when I saw the ingredients for the challenge my thoughts automatically went to making something with an Asian flair.

This was so good and healthy for you too!

Ingredients

  • DRESSING

  • 2 Tbsp
    rice vinegar
  • 2 Tbsp
    light brown sugar
  • 1 1/2 Tbsp
    soy sauce
  • 1 Tbsp
    Sriracha sauce
  • 1 1/2 tsp
    fresh ginger, grated
  • 1/4 c
    canola oil
  • pinch
    salt
  • SALAD COMPONENTS

  • 11 oz
    canned mandarin oranges, drained
  • 6 c
    cabbage, shredded
  • 2 c
    cubed or sliced cooked chicken breast
  • 1 large
    firm-ripe avocado, pitted, peeled, and cubed
  • 4
    green onions, trimmed and sliced diagonally
  • 1/4 c
    chow mein noodles
  • 2 Tbsp
    sesame seeds, toasted

How to Make Ginger Mandarin Chicken Salad with Avocado

Step-by-Step

  1. In a bowl, whisk together vinegar, brown sugar, soy sauce, Sriracha sauce, and ginger. Slowly drizzle in oil, whisking constantly. Season with salt. Set dressing aside.
  2. In a large serving bowl, toss cabbage and chicken with dressing.
  3. Top with avocado, orange slices, and chow mein noodles, then garnish with green onions and sesame seeds.
