ginger chicken
I just came across a letter dated March 27, 1995 from Naoki Sekiya a student we befriended while at the University of Alabama. He ws sending me his recipe for Ginger Chicken.

Ingredients
- 6 - boneless, skinless chicken thighs, cut into cubes
- 1 1/2 - inch piece of fresh ginger
- 1 tablespoon soy sauce
- - kosher salt and freshly ground pepper to taste
- 1 tablespoon sesame oil
- 2 medium onions, sliced in thin wedges
- 2-3 tablespoons canola oil
How To Make ginger chicken

Step 1Place cubed chicken, grated ginger, soy sauce, salt and pepper in a bowl and leave it for a while

Step 2Slice onion into wedges. Heat canola oil in frying pan. Add onions and chicken and "frizzle" with the lid on, stirring until chicken is done.

Step 3Drizzle with sesame oil and serve with white rice. When you start feeling hungry EAT.
