I just came across a letter dated March 27, 1995 from Naoki Sekiya a student we befriended while at the University of Alabama. He ws sending me his recipe for Ginger Chicken.

boneless, skinless chicken thighs, cut into cubes
1 1/2
inch piece of fresh ginger
1 Tbsp
soy sauce
kosher salt and freshly ground pepper to taste
1 Tbsp
sesame oil
2 medium
onions, sliced in thin wedges
2-3 Tbsp
canola oil

How to Make Ginger Chicken


  • 1Place cubed chicken, grated ginger, soy sauce, salt and pepper in a bowl and leave it for a while
  • 2Slice onion into wedges. Heat canola oil in frying pan. Add onions and chicken and "frizzle" with the lid on, stirring until chicken is done.
  • 3Drizzle with sesame oil and serve with white rice. When you start feeling hungry EAT.
  • 4The instruction are as Naoki wrote them.
