Ingredients
- CARAMEL SAUCE
- 1 cup sugar
- 3/4 cup water
- GINGER CHICKEN
- 1 tablespoon butter
- 1 tablespoon olive oil
- 4 bone-in chicken thighs
- 2 inch piece of ginger, sliced
- 2 tablespoons fish sauce
- 4 tablespoons caramel sauce
- 1 scallion, chopped for garnish
How To Make ginger chicken simmered in caramel sauce

Step 1To make the caramel sauce, add the sugar and 1/4 cup of water to a heavy bottomed saucepan. Place over medium low heat. Stir until the sugar melts. Stop stirring and let cook, undisturbed, for about 20 minutes until the color changes to a deep copper color. Remove from heat, place in the sink, and add the remaining 1/2 cup of water. The mixture will seize up but then dissolve into a caramel sauce. Set aside to cool.

Step 2To make the ginger chicken, place the butter and oil in a skillet and add the chicken. Cook for about 20 minutes, turning a couple of times.

Step 3Remove the chicken to a plate. Wipe out the pan and add the ginger, fish sauce, and caramel sauce. Add the chicken back to the pan and cook, basting with the sauce. Serve garnished with the scallion.
