Ingredients
- 6 scallions cut into 2 inch lengths white and green parts separated
- 5 cloves garlic sliced in half
- 6 slices ginger 1/4 inch cuts
- 1 tablespoon vegetable oil
- 1 pound boneless skinless chicken cut into chunks
- 2 shallots chopped
- 1/4 cup shaoxing wine
- 1 1/2 cups chicken stock
- 3 tablespoons brown sugar
- 2 tablespoons soy sauce
- 1 teaspoon dark soy sauce
- 1/2 teaspoon white pepper
- 1 tablespoon oyster sauce
- 1 tablespoon cornstarch mixed with 1 tbsp water
How To Make ginger chicken

Step 1With a cleaver lightly smash the white parts of the scallions, the garlic and ginger. Add oil to a wok or large skillet. Add the ginger and cook 15 seconds. Add the chicken pieces and brown for about 1 minute.

Step 2Add the garlic, shallots, and white parts of the scallions. Cook 1 minute. Add the wine and let most evaporate.

Step 3Add the chicken stock, brown sugar, soy sauce, dark soy sauce, white pepper and oyster sauce. Bring to a boil and cook for about 5 minutes. Mix the cornstarch and water and stir into the wok to thicken the sauce.

Step 4Mix in the dark green parts of the scallions and remove from heat. Serve immediately
