Ingredients

  • 6 scallions cut into 2 inch lengths white and green parts separated
  • 5 cloves garlic sliced in half
  • 6 slices ginger 1/4 inch cuts
  • 1 tablespoon vegetable oil
  • 1 pound boneless skinless chicken cut into chunks
  • 2 shallots chopped
  • 1/4 cup shaoxing wine
  • 1 1/2 cups chicken stock
  • 3 tablespoons brown sugar
  • 2 tablespoons soy sauce
  • 1 teaspoon dark soy sauce
  • 1/2 teaspoon white pepper
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch mixed with 1 tbsp water

How To Make ginger chicken

  • Step 1
    With a cleaver lightly smash the white parts of the scallions, the garlic and ginger. Add oil to a wok or large skillet. Add the ginger and cook 15 seconds. Add the chicken pieces and brown for about 1 minute.
  • Step 2
    Add the garlic, shallots, and white parts of the scallions. Cook 1 minute. Add the wine and let most evaporate.
  • Step 3
    Add the chicken stock, brown sugar, soy sauce, dark soy sauce, white pepper and oyster sauce. Bring to a boil and cook for about 5 minutes. Mix the cornstarch and water and stir into the wok to thicken the sauce.
  • Step 4
    Mix in the dark green parts of the scallions and remove from heat. Serve immediately
