georgia chicken scampi

I created this recipe about the time I got out of school. MANY years ago

Ingredients

  • 1 slice and saute onion
  • 1 large bell pepper jullianned and saute
  • 1 cup sliced peaches save the juice
  • 1/2 cup brown sugar
  • 1/2 cup pecans
  • 1 tablespoon cornstarch and 1/2 cup peach juice mixed
  • 1 1/2 pounds chicken parts boned, skinless and julienned
  • 1 tablespoon minced garlic
  • 1/2 cup white wine
  • 2 tablespoons peach liquor
  • 1 tablespoon basil
  • 2 tablespoons butter
  • 2 tablespoons chopped parsley

How To Make georgia chicken scampi

  • Step 1
    Saute garlic in butter. Add julienned chicken and simmer for 5 minutes. Add wine, parsley, basil, and liquor when the chicken is cooked. Add cornstearch mix to thicken, add peaches and nuts. Simmer 2 minutes until peaches are warm. Can be served over rice or noodles.
