This can be made with shimp. chicken, or pork. My friend V. muddled through the cilantro AGAIN but she loved the dish so it's all good.

Ingredients

  • 1 lb
    shrimp, peeled and deveined or chicken cubed or pork cubed.
  • 1 c
    italian dressing
  • 2 Tbsp
    peanut butter
  • 1 Tbsp
    soy sauce
  • 1 Tbsp
    honey
  • 1 tsp
    ground ginger
  • 1/2 tsp
    red pepper flakes
  • 1 large
    shredded carrot
  • 1 c
    green onion
  • 1 Tbsp
    sesame oil
  • 8 oz
    angel hair pasta
  • 2 Tbsp
    cilantro, fresh
  • 2/3 c
    dry roasted peanuts (*optional but great textural addition)
  • 1 Tbsp
    sriracha chili paste (*optional but it really makes the dish, consider cutting the amount if you like spicy but not too spicy)

How to Make Gayle's Thai Peanut Noodles

Step-by-Step

  1. whisk (I use a tupperware shaker for this step but it needs to mix well) remaining Italian dressing, peanut butter, soy sauce, honey, ginger and red pepper flakes until smooth.
  2. Start a large pot of water to boil pasta
  3. Coat shrimp with 1/2 the italian dressing and set aside for 30 minutes
  4. Saute carrot, onion and meat in the sesame oil until meat is done (about 5 minutes)
  5. pasta should be done about now too, drain well and toss the pasta in a large bowl with peanut sauce, meat mixture and chili paste, sprinkle with cilantro and peanuts and enjoy!
