gayle's thai peanut noodles
This can be made with shimp. chicken, or pork. My friend V. muddled through the cilantro AGAIN but she loved the dish so it's all good.

Ingredients
- 1 pound shrimp, peeled and deveined or chicken cubed or pork cubed.
- 1 cup italian dressing
- 2 tablespoons peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 1 teaspoon ground ginger
- 1/2 teaspoon red pepper flakes
- 1 large shredded carrot
- 1 cup green onion
- 1 tablespoon sesame oil
- 8 ounces angel hair pasta
- 2 tablespoons cilantro, fresh
- 2/3 cup dry roasted peanuts (*optional but great textural addition)
- 1 tablespoon sriracha chili paste (*optional but it really makes the dish, consider cutting the amount if you like spicy but not too spicy)
How To Make gayle's thai peanut noodles

Step 1whisk (I use a tupperware shaker for this step but it needs to mix well) remaining Italian dressing, peanut butter, soy sauce, honey, ginger and red pepper flakes until smooth.

Step 2Start a large pot of water to boil pasta

Step 3Coat shrimp with 1/2 the italian dressing and set aside for 30 minutes

Step 4Saute carrot, onion and meat in the sesame oil until meat is done (about 5 minutes)

Step 5pasta should be done about now too, drain well and toss the pasta in a large bowl with peanut sauce, meat mixture and chili paste, sprinkle with cilantro and peanuts and enjoy!
