gayle's thai peanut noodles

This can be made with shimp. chicken, or pork. My friend V. muddled through the cilantro AGAIN but she loved the dish so it's all good.

Ingredients

  • 1 pound shrimp, peeled and deveined or chicken cubed or pork cubed.
  • 1 cup italian dressing
  • 2 tablespoons peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes
  • 1 large shredded carrot
  • 1 cup green onion
  • 1 tablespoon sesame oil
  • 8 ounces angel hair pasta
  • 2 tablespoons cilantro, fresh
  • 2/3 cup dry roasted peanuts (*optional but great textural addition)
  • 1 tablespoon sriracha chili paste (*optional but it really makes the dish, consider cutting the amount if you like spicy but not too spicy)

How To Make gayle's thai peanut noodles

  • Step 1
    whisk (I use a tupperware shaker for this step but it needs to mix well) remaining Italian dressing, peanut butter, soy sauce, honey, ginger and red pepper flakes until smooth.
  • Step 2
    Start a large pot of water to boil pasta
  • Step 3
    Coat shrimp with 1/2 the italian dressing and set aside for 30 minutes
  • Step 4
    Saute carrot, onion and meat in the sesame oil until meat is done (about 5 minutes)
  • Step 5
    pasta should be done about now too, drain well and toss the pasta in a large bowl with peanut sauce, meat mixture and chili paste, sprinkle with cilantro and peanuts and enjoy!
