gayle's coffee braised chicken
On my quest to get more ribbons I pulled this from my early cooking days and revisited it today, it is just as good now as it was when I first started making it.

Ingredients
- 3-5 pounds cubed chicken (i used a combo of dark and white meat, they both tasted great)
- 2/3 cup soy sauce (low sodium would be ok too)
- 1/3 cup strong coffee
- 1 cup sugar
- 1 cup water
- 1 teaspoon fresh ginger
- 2 cloves minced or pressed garlic
- 1/2 teaspoon red pepper flake (optional)
- I LIKE MY LIQUID A LITTLE BIT THICK, IF YOU PREFER YOURS BROTHY SKIP THIS NEXT STEP BECAUSE IT IS OPTIONAL
- 1/2 cup water
- 2 tablespoons corn starch

Step 1Add all ingredients (except the corn starch and 1/2 cup water that is for thickening later)into a large stock pot.

Step 2Bring to a boil, reduce heat, cover and simmer over medium heat for 40 minutes WITHOUT STIRRING OR OPENING, just shake the pan once or twice during cooking.

Step 3at 40 minutes if you are going to thicken the broth combine corn starch and cold water and slowly add to bubbling liquid stirring constantly. Let sit 5 minutes before serving.

Step 5I used my rice cooker to cook the rice and in the steam basket in the rice cooker I steamed some broccoli to serve the chicken and sauce over.
