Ingredients
- 2 tablespoons butter, unsalted
- 8 cloves garlic, minced
- 1 quart chicken broth
- 6 ounces tortellini, cheese stuffed
- 1 can tomatoes, diced, undrained
- 10 ounces spinach, frozen, thawed & sqeezed dry
- 10 - basil, fresh, chopped
- - parmigiano-reggiano, grated
How To Make garlicky tortellini, spinach & tomato soup

Step 1Melt the butter in a large saucepan over medium-high heat. Add the garlic & saute until fragrant, about 2 minutes. Add the broth & bring to a boil.

Step 2Add the tortellini & cook halfway, about 5 minutes for frozen pasta, less if using fresh.

Step 3Add the tomatoes & their liquid, reduce the heat to a simmer & cook just until the pasta is tender.

Step 4Stir in the spinach & basil & cook until wilted, 1 - 2 minutes. Serve sprinkled with the grated cheese.
