Ingredients

  • 2 tablespoons butter, unsalted
  • 8 cloves garlic, minced
  • 1 quart chicken broth
  • 6 ounces tortellini, cheese stuffed
  • 1 can tomatoes, diced, undrained
  • 10 ounces spinach, frozen, thawed & sqeezed dry
  • 10 - basil, fresh, chopped
  • - parmigiano-reggiano, grated

How To Make garlicky tortellini, spinach & tomato soup

  • Step 1
    Melt the butter in a large saucepan over medium-high heat. Add the garlic & saute until fragrant, about 2 minutes. Add the broth & bring to a boil.
  • Step 2
    Add the tortellini & cook halfway, about 5 minutes for frozen pasta, less if using fresh.
  • Step 3
    Add the tomatoes & their liquid, reduce the heat to a simmer & cook just until the pasta is tender.
  • Step 4
    Stir in the spinach & basil & cook until wilted, 1 - 2 minutes. Serve sprinkled with the grated cheese.
