garlic chicken & potato skillet

I came up with this dinner by reading two recipes, and then combining what I like about the two! It will definitely be a staple recipe from now on!

Ingredients

  • 4 medium chicken breasts, boneless and skinless
  • 2 large baking potatoes
  • 5 tablespoons butter, cold
  • 1/2 teaspoon garlic, minced
  • 1 can cream of chicken soup
  • 1/2 cup whipping cream or milk
  • 1/4 cup parmesan cheese
  • 1 bunch asparagus, fresh or any vegetable you choose
  • - salt and pepper to taste

How To Make garlic chicken & potato skillet

  • Step 1
    Preheat oven to 375
  • Step 2
    Put potatoes in microwave for 4 minutes to help get them cooking. Dice potatoes once cool enough to handle.
  • Step 3
    Over medium heat in a cast iron skillet place potatoes, butter, and garlic. Let potatoes get just a little crispy on both sides flipping them with spatula. 5-10 minutes.
  • Step 4
    Once potatoes have crisp up place the chicken breasts on top of potatoes, cover and cook for 10 minutes. Add asparagus or vegetable of your choice, cover, and cook an additional 5 minutes.
  • Step 5
    Meanwhile, mix soup, milk, salt, and pepper together and pour on top of chicken and vegetables. Sprinkle Parmesan cheese on top.
  • Step 6
    Move skillet to oven and let bake until chicken is completely cooked.
