If you want an impressive pasta dinner that's packed with flavor, try this garlic chicken pasta with prosciutto. It's filled with tender chicken breast chunks sauteed in butter, alongside sweet tomatoes and salty prosciutto. Roasted red peppers and pasilla chiles are mixed in to add some spice and a smoky flavor. We loved the flavor fresh basil adds. Served over linguine pasta with an ample amount of savory, freshly grated Parmesan cheese, it's a delicious pasta dish.

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup minced garlic
  • 5 tomatoes, seeded and chopped
  • 4 ounces prosciutto, cut into small pieces
  • 2 pounds chicken breasts, grilled and cut into strips or cubed
  • 2 tablespoons butter
  • 1/2 cup fresh basil, sliced into small strips
  • 3/4 cup linguine, uncooked
  • 5 roasted pasilla chiles, peeled, seeded and cut into strips
  • 2 roasted red peppers, peeled, seeded cut into strips
  • 1/2 cup grated fresh Parmesan or Romano cheese
  • fresh basil, for garnish

How To Make garlic chicken pasta with prosciutto

  • Saute garlic, tomatoes, prosciutto, chicken, and butter.
    Step 1
    Heat oil in a large skillet and saute garlic until soft and light brown. Add tomatoes, prosciutto, chicken, and butter; saute for about 5 to 10 minutes.
  • Add basil.
    Step 2
    Add basil and saute for another 5 minutes.
  • Cook linguine until al dente.
    Step 3
    In a stockpot, bring water to a boil and cook linguine until firm al dente. Drain pasta.
  • Add pasta to a bowl, mix with the chicken mixture, and sprinkle with Parmesan cheese.
    Step 4
    Transfer pasta to a bowl. Add the chicken tomato mixture, chiles, roasted peppers, and grated cheese; toss gently to combine. Sprinkle with basil and serve.
