Ingredients

  • GARLIC BUTTER:
  • 1 head - garlic, peeled & smashed
  • 1/8 cup olive oil, extra virgin
  • 1 stick butter, room temperature
  • 1 teaspoon thyme, dried
  • 1 teaspoon sea salt
  • 1 tablespoon parsley
  • CHICKEN:
  • 5 - 6 pounds whole chicken, skin on
  • 1 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1 - lemon, sliced into wedges
  • 3 sprigs thyme
  • 2 sprigs rosemary
  • 1 head - garlic, unpeeled, broken into cloves

How To Make garlic butter roasted chicken

  • Step 1
    GARLIC BUTTER: In a food processor, blend all ingredients; mix to combine. Set aside.
  • Step 2
    CHICKEN: Preheat oven to 400 degrees F. Rinse chicken, remove giblets & pat dry with paper towels.
  • Step 3
    Lightly grease bottom of roasting pan. Inside chicken lightly season with salt & pepper. With kitchen twine, tie sprigs of thyme & rosemary together. Stuff inside cavity along with lemon & garlic head/cloves. Truss chicken.
  • Step 4
    Place in roasting pan; generously baste with garlic butter mixture (including under skin). Cover chicken loosely with foil. Roast 1 hour; remove foil. Roast another 30 minutes.
