Ingredients
- GARLIC BUTTER:
- 1 head - garlic, peeled & smashed
- 1/8 cup olive oil, extra virgin
- 1 stick butter, room temperature
- 1 teaspoon thyme, dried
- 1 teaspoon sea salt
- 1 tablespoon parsley
- CHICKEN:
- 5 - 6 pounds whole chicken, skin on
- 1 teaspoon sea salt
- 1/2 teaspoon pepper
- 1 - lemon, sliced into wedges
- 3 sprigs thyme
- 2 sprigs rosemary
- 1 head - garlic, unpeeled, broken into cloves
How To Make garlic butter roasted chicken

Step 1GARLIC BUTTER: In a food processor, blend all ingredients; mix to combine. Set aside.

Step 2CHICKEN: Preheat oven to 400 degrees F. Rinse chicken, remove giblets & pat dry with paper towels.

Step 3Lightly grease bottom of roasting pan. Inside chicken lightly season with salt & pepper. With kitchen twine, tie sprigs of thyme & rosemary together. Stuff inside cavity along with lemon & garlic head/cloves. Truss chicken.

Step 4Place in roasting pan; generously baste with garlic butter mixture (including under skin). Cover chicken loosely with foil. Roast 1 hour; remove foil. Roast another 30 minutes.
