Ingredients
- 2 bulbs garlic
- 1 lemon, juice and zest
- 1 bunch thyme leaves
- 3 sprigs rosemary, removed from the sprig
- 1 tablespoon cumin seeds, toasted and ground
- 1 tablespoon salt
- 1 teaspoon black pepper
- olive oil
- 8 bone-in chicken thighs
How To Make garlic bathed chicken

Step 1Place the garlic bulbs in a preheated 375 degree oven and let them roast for about 30 minutes. Remove from the oven and let cool until you can handle them. Squeeze the garlic out of the bulbs into a bowl.

Step 2Place the garlic, lemon juice and zest, thyme, rosemary, cumin, salt, and pepper in a food processor. Process while drizzling in the olive oil until you get a loose paste.

Step 3Place the chicken on a sheet pan and rub the garlic mixture all over the chicken pieces. Let it sit at room temperature for 1 hour.

Step 4Transfer the chicken to a baking dish and cover with foil. Place in a preheated oven at 375 degrees and roast for 20 minutes.

Step 5Remove the foil and roast another 20 minutes or until the juices run clear.
