I made this tonight and it was a huge hit. As it was just us two, I only cooked two Cornish Hens, and reduced the amount of jelly. I did, though use the entire half cup of butter. Fantastic! Hubby loved it. He was soaking chunks of white meat chicken breast into the melted jelly and butter. I didn't use all of it on the birds, so I had some left. It was great.

1/2 cup butter

1 jar jalapeno jelly, 7.5 oz

2 tbsp. lime juice

6 rock cornish game hens

salt and pepper
How To Make game hens with jalapeno jelly, tnt

1Mix the butter and jalapeno jelly in a pan. Stir until melted on medium high heat. Stir in lime juice. Set aside.

2Cut hens in half. Rinse and pat dry. Place birds, bone side down, side by side, on racks in 10 by 15 inch baking pans. Brush with jelly mixture and sprinkle lightly with salt and pepper.

3Bake at 400 uncovered, until done, about 30 to 40 minutes ( I cooked mine a little longer). Cut to test. Bate occasionally, using all of the jelly mixture. (As I made a lot of the basting sauce, I had some left over. Glad I did, too. It's great to use as a dipping sauce.) Serves 6
