1In bowl, mix together mustard, honey, lemon juice, 1 tbsp oil and salt & pepper. Place chicken in lg resealable bag. Pour 1/2 the marinade over chicken. Marinate 24 hrs. Set aside remaining marinade.
2Heat oven to 375. In skillet, over med-high heat, cook bacon until crisp. Drain on paper towels. Place 1 tbsp oil into skillet w/ bacon grease. Take chicken out of marinade, discard marinade from bag. Brown chicken in skillet on both sides.
3Place chicken in shallow baking dish. Saute mushrooms in skillet. Top each chicken breast w/ 2 slices bacon, mushrooms and sprinkle w/ both cheeses. Cover baking dish w/ foil. Bake 10 mins, or until cheese is melted. sprinkle w/ parsley and serve w/ reserved marinade.
