Ingredients

  • 1 cup - all purpose flour, sifted
  • 1 tsp - baking powder
  • 1 tsp - salt
  • 1 - egg, beaten
  • 1/2 cup - beer, your choice of oil for frying
  • 1 lb. - raw shrimp, shelled and deveined, frozen shrimp is fine,
  • 1 tbs - each cornstarch & sugar
  • 4 tbs - vinegar
  • 1/2 cup - pineapple juice
  • 1 cup - pineapple chunks, drained

How To Make fried shrimp with pineapple

  • Step 1
    Sift flour, baking powder, and 1/2 teaspoon salt into bowl. Beat in egg and beer. Heat oil in deep fryer or deep skillet to medium high.
  • Step 2
    Dip shrimp in batter, coating well on all sides. Fry in hot oil until nicely browned. Drain. Keep warm.
  • Step 3
    Mix cornstarch with sugar, 1/2 teaspoon salt, and vinegar. Add pineapple juice, cook over low heat, stirring constantly, until thickened.
  • Step 4
    Arrange shrimp on serving platter. Place pineapple chunks around shrimp, pour sauce over all.
