Tired of the same ol' fried chicken, I thought I'd change it up a bit and go Italian. I served it with a Parmesan and Roasted Garlic Alfredo sauce served over pasta. It was a big hit ! Sooo good !

Ingredients
- 4 - chicken breasts, boneless and skinless
- 1 cup bread crumbs, dry
- 1 tablespoon italian seasoning
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon crushed red pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 tablespoon dried parsley
- - a little less than a 1/4 inch of olive oil to fry in.
- FLOUR AND EGG WASH
- 1/2 cup flour
- 1 large egg
- 1 tablespoon water

Step 1Place chicken in a bag and pound it, so that the thickness is even. (about 1/4 inch thick or so)

Step 2In a shallow bowl (I like to use a pie plate) add the bread crumbs, Italian seasoning, salt, pepper, garlic & onion powder and crushed red pepper. Mix well

Step 3Put flour in another shallow bowl or plate. Next beat egg with the water in yet another shallow dish. Line them up, flour, egg wash then bread crumb mixture.

Step 4Add oil to skillet. Dip chicken in the flour, then egg wash and finally the bread crumbs.

Step 5If oil is hot, place chicken in skillet and fry for about 5 minutes each side or till completely cooked through. Drain on a rack or on a paper towel.
