Tired of the same ol' fried chicken, I thought I'd change it up a bit and go Italian. I served it with a Parmesan and Roasted Garlic Alfredo sauce served over pasta. It was a big hit ! Sooo good !

Ingredients

chicken breasts, boneless and skinless
1 c
bread crumbs, dry
1 Tbsp
italian seasoning
1 tsp
salt
1/4 tsp
black pepper
1/2 tsp
crushed red pepper
1/2 tsp
garlic powder
1/2 tsp
onion powder
1 Tbsp
dried parsley
a little less than a 1/4 inch of olive oil to fry in.

FLOUR AND EGG WASH

1/2 c
flour
1 large
egg
1 Tbsp
water

How to Make Fried Chicken, Italian Style, Millie's

Step-by-Step

  • 1Place chicken in a bag and pound it, so that the thickness is even. (about 1/4 inch thick or so)
  • 2In a shallow bowl (I like to use a pie plate) add the bread crumbs, Italian seasoning, salt, pepper, garlic & onion powder and crushed red pepper. Mix well
  • 3Put flour in another shallow bowl or plate. Next beat egg with the water in yet another shallow dish. Line them up, flour, egg wash then bread crumb mixture.
  • 4Add oil to skillet. Dip chicken in the flour, then egg wash and finally the bread crumbs.
  • 5If oil is hot, place chicken in skillet and fry for about 5 minutes each side or till completely cooked through. Drain on a rack or on a paper towel.
