Ingredients
- 2 pounds chicken, cleaned and cut into serving size pieces
- 3 cloves garlic, chopped
- 1 large bell pepper sliced
- 1 large onion, chopped
- 1 can 8oz tomato sauce
- 1 cup dry cooking wine
- 1 pound potatoes , cut into bite size pieces
- - salt and papper to taste
- - half a lime and half an orange, juice only
- 1/4 cup spanish olives
How To Make fricase de pollo (chicken fricase)

Step 1Marinade chicken pieces in garlic cloves, citrus juice, onion and bell pepper for at least one hour. Heat oil and brown chicken. Add onion, pepper and citrus from the marinade. Add tomato sauce, olives, cooking wine, salt & pepper. Add water to cover the chicken, cook till chicken is almost done. Add the potato pieces in the last 20 minutes of cooking.

Step 2Serve over white rice.
