fresh mex chicken taco's

I have been making these for 30 years. This recipe is a family favorite!

Ingredients

  • 2 cups cooked chicken (shredded)
  • 1 1/2 cups cheddar cheese (shredded)
  • 1 1/2 cups lettuce or napa cabbage (torn)
  • 1 bunch green onion (sliced)
  • 1 1/2 - tomato's (cubed)
  • 1 can black olives (sliced)
  • 3 tablespoons canola oil
  • 12 - corn tortillas
  • - sour cream (optional)
  • - guacamole (optional)

How To Make fresh mex chicken taco's

  • Step 1
    shred chicken
  • Step 2
    shred cheese
  • Step 3
    tear lettuce into small bite size pieces
  • Step 4
    cut tomato's into cubes
  • Step 5
    open can of olices
  • Step 6
    slice green onions
  • Step 7
    place a tablespoon of canola oil into a frying pan and heat on medium to medium high heat
  • Step 8
    when oil is hot place 1 tortilla into hot oil. Heat on one side, and flip over with spatula
  • Step 9
    place a small row of cooked chicken in the middle of the tortilla and a small amout of shredded cheese
  • Step 10
    with spatula fold tortilla in half
  • Step 11
    cook each filled tortilla 1 minute on each side
  • Step 12
    continue this process until all the tortilla's have been cooked
  • Step 13
    place cooked filled totilla's on a plate lined with paper towels. Stuff each taco shell with lettuce, tomatoes, black olives and green onions. add a dab of sour cream and/or gucamole, enjoy!
