Ingredients
- 2 cups cooked chicken (shredded)
- 1 1/2 cups cheddar cheese (shredded)
- 1 1/2 cups lettuce or napa cabbage (torn)
- 1 bunch green onion (sliced)
- 1 1/2 - tomato's (cubed)
- 1 can black olives (sliced)
- 3 tablespoons canola oil
- 12 - corn tortillas
- - sour cream (optional)
- - guacamole (optional)
How To Make fresh mex chicken taco's

Step 1shred chicken

Step 2shred cheese

Step 3tear lettuce into small bite size pieces

Step 4cut tomato's into cubes

Step 5open can of olices

Step 6slice green onions

Step 7place a tablespoon of canola oil into a frying pan and heat on medium to medium high heat

Step 8when oil is hot place 1 tortilla into hot oil. Heat on one side, and flip over with spatula

Step 9place a small row of cooked chicken in the middle of the tortilla and a small amout of shredded cheese

Step 10with spatula fold tortilla in half

Step 11cook each filled tortilla 1 minute on each side

Step 12continue this process until all the tortilla's have been cooked

Step 13place cooked filled totilla's on a plate lined with paper towels. Stuff each taco shell with lettuce, tomatoes, black olives and green onions. add a dab of sour cream and/or gucamole, enjoy!
