Ingredients
- 6 - bone in chicken thighs
- - salt and pepper
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 large onion chopped
- 1 large carrot thinly sliced
- 8 ounces mushrooms sliced
- 4 cloves garlic minced
- 1/2 cup white wine
- 2 tablespoons flour
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons fresh parsley chopped
- 2 teaspoons fresh thyme chopped

Step 1Season the chicken with salt and pepper. Place the oil in a large skillet. Get the oil hot and add the chicken and brown well on both sides. Remove the chicken and set aside.

Step 2Place the butter in the skillet. Add the onion, and garlic and saute about 3 minutes. Add the carrot and mushrooms.Cook 5 minutes then add the wine and let most evaporate scrapping up the bits from the bottom of pan.

Step 3Stir in the flour. Add the chicken stock and heavy cream. Add the chicken back to the skillet. Let cook until the chicken is no longer pink. Stir in the parsley and thyme.
