This recipe is adapted from "America's Most Wanted Recipes" and is a copycat recipe from Applebees. This recipe is also lightened up by using the Weight Watchers Recipe Builder E-Tool. This serves 4 people and is 10 WW Points Plus per serving. Serve with Spanish Rice, your favorite lighter option mexican side dish or simply steamed veggies.

Ingredients

  • 1 cup water
  • 1/3 cup teriyaki sauce
  • 1/2 cup lime juice
  • 3 cloves garlic, minced
  • 1 teaspoon tequila
  • 1 teaspoon liquid smoke flavoring
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1 pound boneless, skinless chicken breasts
  • DRESSING
  • 1/4 cup kraft reduced fat mayo (made with olive oil)
  • 1/4 cup fat free sour cream
  • 2 tablespoons spicy, chunky salsa
  • 1 tablespoon fat free milk
  • 1 teaspoon cajun blackening spice
  • 1/4 teaspoon parsley flakes
  • 1/4 teaspoon tabasco sauce
  • 1/8 teaspoon dried dill weed
  • 1/8 teaspoon ground cumin
  • GARNISH
  • 1 cup shredded colby jack cheese
  • 2 cups crumbled corn chips

How To Make fiesta lime chicken (weight watchers)

  • Step 1
    Whisk together the water, teriyaki, lime juice, garlic, tequila, liquid smoke, salt, and ginger. Coat the chicken in the mixture, and marinate in the refrigerator for at least 2 hours.
  • Step 2
    To prepare the dressing, whisk together the mayo, sour cream, salsa, milk, cajun spice, parsley, tabasco, dill weed, and cumin. Cover, and refrigerate until needed.
  • Step 3
    Preheat the broiler. Grill the marinated chicken breasts for 3-5 minutes per side, until cooked through. Discard the marinade.
  • Step 4
    Brush the grilled chicken with the chilled dressing, sprinkle with the cheese, and broil until the cheese has melted.
  • Step 5
    Serve the chicken over a bed of the crumbled chips.
