Fiesta Lime Chicken (Weight Watchers)

This recipe is adapted from "America's Most Wanted Recipes" and is a copycat recipe from Applebees. This recipe is also lightened up by using the Weight Watchers Recipe Builder E-Tool. This serves 4 people and is 10 WW Points Plus per serving. Serve with Spanish Rice, your favorite lighter option mexican side dish or simply steamed veggies.

teriyaki sauce
1/2 c
lime juice
3 clove
garlic, minced

liquid smoke flavoring
1/2 tsp
1/4 tsp
ground ginger
1 lb
boneless, skinless chicken breasts


1/4 c
kraft reduced fat mayo (made with olive oil)
1/4 c
fat free sour cream
2 Tbsp
spicy, chunky salsa
1 Tbsp
fat free milk
1 tsp
cajun blackening spice
1/4 tsp
parsley flakes
1/4 tsp
tabasco sauce
1/8 tsp
dried dill weed
1/8 tsp
ground cumin

shredded colby jack cheese
2 c
crumbled corn chips


1Whisk together the water, teriyaki, lime juice, garlic, tequila, liquid smoke, salt, and ginger. Coat the chicken in the mixture, and marinate in the refrigerator for at least 2 hours.
2To prepare the dressing, whisk together the mayo, sour cream, salsa, milk, cajun spice, parsley, tabasco, dill weed, and cumin. Cover, and refrigerate until needed.
3Preheat the broiler. Grill the marinated chicken breasts for 3-5 minutes per side, until cooked through. Discard the marinade.
4Brush the grilled chicken with the chilled dressing, sprinkle with the cheese, and broil until the cheese has melted.
5Serve the chicken over a bed of the crumbled chips.
