Ingredients
- 6 - boneless, skinless chicken breasts
- 3 - 4 oz. can chopped mild green chilies, each can divided to cover the breasts
- 8 ounces shredded monterrey jack cheese
- 8 ounces shredded mild cheddar cheese ( can use 16 oz. jack and cheddar mix)
- 3 - eggs
- 1/4 cup all-purpose flour
- 1 1/4 cups milk
- 1/2 teaspoon salt and pepper
- 1 drop - tabasco
- 1/4 teaspoon paprika
How To Make fiesta chicken

Step 1Flatten chicken with meat mallet. Sprinkle with chilies. Place 1/4 cup cheeses over the chilies. Fold ends of chicken to form a roll. Place in a greased 1 1/2 quart size cassserole dish. Beat eggs, flour, salt and pepper and liquid pepper until frothy. Pour egg mixture over chicken breasts. Sprinkle on remaining cheese and top with paprika. Bake at 350 degrees for 30 to 45 minutes.
