Ingredients For fiesta chicken
boneless, skinless chicken breasts
4 oz. can chopped mild green chilies, each can divided to cover the breasts
shredded monterrey jack cheese
shredded mild cheddar cheese ( can use 16 oz. jack and cheddar mix)
1 1/4 c
salt and pepper
How To Make fiesta chicken
Flatten chicken with meat mallet. Sprinkle with chilies. Place 1/4 cup cheeses over the chilies. Fold ends of chicken to form a roll. Place in a greased 1 1/2 quart size cassserole dish. Beat eggs, flour, salt and pepper and liquid pepper until frothy. Pour egg mixture over chicken breasts. Sprinkle on remaining cheese and top with paprika. Bake at 350 degrees for 30 to 45 minutes.
