This is a quick and simple Mexican casserole dish that is very creamy and has a little spice. It is one I've made many times and one I'm sure you'll like as well. We like to garnish it with lettuce, tomato, cilantro and extra cheese

Ingredients

  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 2 small tomatoes, diced
  • 1/3 cup picante sauce
  • 1 medium green bell pepper, diced
  • 1 small onion, diced
  • 2-3 teaspoons red chili powder
  • 12 - corn tortillas, cut into 1" strips
  • 3 cups cubed diced chicken, cooked
  • 1 cup shredded colby cheese

How To Make fiesta chicken

  • Step 1
    Preheat oven to 350 degrees
  • Step 2
    In a bowl combine first 7 ingredients and mix well. In a greased baking dish put down a layer of tortilla strips, top with half the chicken, soup mixture and cheese; repeat layers.
  • Step 3
    Cover and bake for 40-50 minutes or until bubbly
