This is a quick and simple Mexican casserole dish that is very creamy and has a little spice. It is one I've made many times and one I'm sure you'll like as well.

We like to garnish it with lettuce, tomato, cilantro and extra cheese

  • 1 can(s)
    cream of chicken soup
  • 1 can(s)
    cream of mushroom soup
  • 2 small
    tomatoes, diced
  • 1/3 c
    picante sauce
  • 1 medium
    green bell pepper, diced
  • 1 small
    onion, diced
  • 2-3 tsp
    red chili powder
  • 12
    corn tortillas, cut into 1" strips
  • 3 c
    cubed diced chicken, cooked
  • 1 c
    shredded colby cheese

How to Make Fiesta Chicken


  1. Preheat oven to 350 degrees
  2. In a bowl combine first 7 ingredients and mix well. In a greased baking dish put down a layer of tortilla strips, top with half the chicken, soup mixture and cheese; repeat layers.
  3. Cover and bake for 40-50 minutes or until bubbly
