I came up with this when I was putting some things together one night for dinner. It ended up coming out amazing and has been a hit ever since. Enjoy it just like we do every time.

This Feta, spinach, and chicken recipe is a great example of working with what you have in the kitchen to create a fantastic meal. We used a cast iron skillet to brown the seasoned chicken breasts, which helped seal in the juices. This recipe can also be made with chicken thighs, if you prefer those. Wilting spinach in butter adds richness and a savory touch. The cheese sauce is rich and creamy. There's a slight texture from the Feta cheese. Made with Feta, Parmesan, lemon juice, milk, and ranch dressing, it's a little salty, zesty, nutty, and cheesy. It's wonderful drizzled over the chicken breasts.

Ingredients

  • 3 tablespoons butter, divided
  • 3 - 4 chicken breasts, boneless and skinless
  • 1/2 teaspoon salt
  • 1/2 teaspoon lemon pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/3 cup Feta cheese
  • 1/3 cup Parmesan cheese
  • 1 tablespoon lemon juice
  • 1/4 cup milk
  • 1/2 cup ranch dressing
  • 1 package fresh baby spinach (10 oz)
  • 1 - 1 1/2 cups rice
  • water per package directions

How To Make feta, spinach, and chicken

  • In a pan over medium heat, add 1 Tbsp butter and melt.
