feta, spinach, and chicken
I came up with this when I was putting some things together one night for dinner. It ended up coming out amazing and has been a hit ever since. Enjoy it just like we do every time.
Blue Ribbon Recipe
This Feta, spinach, and chicken recipe is a great example of working with what you have in the kitchen to create a fantastic meal. We used a cast iron skillet to brown the seasoned chicken breasts, which helped seal in the juices. This recipe can also be made with chicken thighs, if you prefer those. Wilting spinach in butter adds richness and a savory touch. The cheese sauce is rich and creamy. There's a slight texture from the Feta cheese. Made with Feta, Parmesan, lemon juice, milk, and ranch dressing, it's a little salty, zesty, nutty, and cheesy. It's wonderful drizzled over the chicken breasts.

How To Make feta, spinach, and chicken
-
Step 1Preheat the oven to 350 degrees F. In a pan over medium heat, add 1 Tbsp butter and melt.
-
Step 2Meanwhile, season chicken with salt, lemon pepper, garlic powder, and onion powder.
-
Step 3Put into the pan and cook until golden brown on both sides, about 5 minutes per side.
-
Step 4Then place in the oven at 350 degrees for about 25 minutes or until it runs clear. When the chicken is done, take it out of the oven and set it aside. Keep warm by putting tin foil over the top.
-
Step 5When the chicken is almost done in the oven, start the sauce. In a pot over medium-low heat, add Feta cheese, Parmesan cheese, lemon juice, milk, and ranch dressing. Mix together.
-
Step 6Stir until the cheese is melted.
-
Step 7Put water in a pot for the rice.
-
Step 8Cook as directed on the package.
-
Step 9In a skillet on medium heat, add the remaining 2 Tbsp butter.
-
Step 10Then add the spinach.
-
Step 11Stir around sometimes until it wilts down. Then take it off the heat.
-
Step 12To plate what I like to do is put some rice down, then add chicken to the top, then the spinach, and then the Feta sauce.
