feta & spinach stuffed chicken breast

My daughter absolutely loves chicken and can eat it every day. Hence the need to be creative and since I like anything with spinach, I thought if I added a little feta and stuffed the chicken I would like chicken again. The sauce came later after a little experimentation.

Ingredients

  • - olive oil, extra virgin
  • 4 cloves garlic, minced
  • 1 bunch shallots, chopped finely
  • 2 packages baby spinach
  • 2 cups feta cheese
  • 4 - chicken breast-med to large
  • 1 can chicken broth
  • 1 cup half and half
  • pinch nutmeg

How To Make feta & spinach stuffed chicken breast

  • Step 1
    Put a splash of olive oil in a med hot,deep frying pan. Add garlic and shallots. Turn pan down and cook for 2 to 3 mins. Add spinach and cook until wilted. Remove from pan and let cool. About 10 mins. When cool, add 1 cup of the feta cheese. Wash and clean your chicken. Make a pocket in your chicken breast, be careful to not go all the way through. Stuff the chicken pocket with the spinach mixture and secure with a toothpick. Put chicken broth in a shallow roasting pan, then put a rack in the pan. Place the chicken breast on the rack and cover with foil. Cook chicken for about 20 to 30 mins, depending on the thickness of the chicken breast.
  • Step 2
    Now lets make a sauce. In a heavy saucepan, heat half & half slowly. When it just comes to a simmer, add the nutmeg and 1 cup of the feta cheese. Stir, stir, stir. We don't want any lumps and it will take a little while for the feta to melt. So please be patient. Serve over the chicken. Yum Yum
