fancy chicken spaghetti
A true comfort casserole kicked up with white wine and mushrooms. Found this in a thrift store box of hand-written recipes. 30 minutes of cooking time is oven time.

Ingredients
- 3 pounds whole chicken
- 8 ounces thin spaghetti
- 8 tablespoons butter, divided use
- 4 tablespoons flour
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup mayonnaise
- 1 cup sour cream
- 1 cup grated parmesan cheese
- 2 tablespoons lemon juice, freshly squeezed
- 1/3 cup dry white wine
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
- 1 teaspoon dry mustard
- 1 teaspoon kosher salt
- 8 ounces mushrooms, sliced
How To Make fancy chicken spaghetti

Step 1Cut chicken in pieces and boil until done. Remove and bone the chicken; set aside. Bring the chicken broth to a boil.

Step 2Break spaghetti in half and cook until al dente in the boiling broth. Reserve a cup of the chicken broth, then drain the spaghetti. Set aside.

Step 3Make the sauce: In a large saucepan, melt 4 tablespoons of the butter. Add flour and cook until bubby, plus one more minute. Add the cream and the reserved cup of chicken broth. Stir until thickened.

Step 4Add the mayonnaise, sour cream, parmesan, lemon juice, wine, and the seasonings. Stir until incorporated.

Step 5In a separate pan, saute the mushrooms in the remaining 4 tablespoons butter.

Step 6In the large saucepan (or a large bowl, if not big enough), add the sauteed mushrooms, cooked chicken, and spaghetti. Gently combine until everything is coated. Pour into a 3 quart casserole (or a 9x13 baking pan). Sprinkle with paprika and additional freshly grated parmesan on top. Bake for 30 minutes.
