family favorite coq au vin

This recipe was originally given to me by my ex-mother-in-law. It has been in my family around 30yrs and is one of my daughter's favorite. It is Big on taste but so very easy to put together. This is the reason it was the first recipe that my daugther wanted when she first got married.

Ingredients

  • 12 - chicken tenders or 4-6 chicken breast cut into slices
  • 16oz packages button mushrooms
  • 3/4 cup red wine
  • 1/4 cup soy sauce
  • 1/4 cup canola oil
  • 1 clove garlic, minced
  • 1 teaspoon ginger
  • 1/4 teaspoon oregano
  • 1 tablespoon brown sugar

How To Make family favorite coq au vin

  • Step 1
    Preheat oven to 350 degrees. Spray a 9x13 baking dish with cooking spray. Pour wine into pan; add soy sauce, oil, garlic, ginger, oregano and brown sugar. Whisk to combine thoroughly.
  • Step 2
    Add chicken to pan with wine mixture. Add mushrooms, top side down. Spoon some of the wine mixture over chicken and mushrooms (make sure that the wine mixture gets inside the mushroom caps).
  • Step 3
    Bake covered at 350 degrees for 1 hour.
