Kevin and Connor's grandma Evelyn is an awesome cook and this is one of her recipes. These are not exact measurements because it's a recipe she jotted down on a scrap of paper.

Ingredients For evelyn's chicken scalopini

  • 2 lb
    chicken cutlets, cut into 2 inch strips
  • eggs
  • bread crumbs
  • parmesan cheese
  • canola oil
  • 10 1/2 oz
    canned chicken broth
  • 1 Tbsp
    flour
  • 1 can
    cream of mushroom soup
  • 2 can
    mushrooms with juice (or bottled)
  • 1/2 can
    white wine (use soup can)

How To Make evelyn's chicken scalopini

  • 1
    Cut chicken into 2 inch strips. Dip in egg and bread crumbs with parmesan cheese added. Fry in oil until golden. Put cooked chicken into baking dish.

    Add chicken broth to frying pan and add flour. Stir. Add Cream of Mushroom soup, mushrooms with juice and white wine. Stir until smooth. Pour mixture over chicken. Cover and bake in 350 degree oven for 30 to 45 minutes.
