Ingredients
- 2 pounds chicken cutlets, cut into 2 inch strips
- - eggs
- - bread crumbs
- - parmesan cheese
- - canola oil
- 10 1/2 ounces canned chicken broth
- 1 tablespoon flour
- 1 can cream of mushroom soup
- 2 cans mushrooms with juice (or bottled)
- 1/2 can white wine (use soup can)
How To Make evelyn's chicken scalopini

Step 1Cut chicken into 2 inch strips. Dip in egg and bread crumbs with parmesan cheese added. Fry in oil until golden. Put cooked chicken into baking dish.

Step 2Add chicken broth to frying pan and add flour. Stir. Add Cream of Mushroom soup, mushrooms with juice and white wine. Stir until smooth. Pour mixture over chicken. Cover and bake in 350 degree oven for 30 to 45 minutes.
