Ingredients
- 1 box orzo pasta
- 2 - eggplants, peeled cut into circles
- 1-1.5 - whole chicken breasts cooked and cut into small bite size pieces
- 6 ounces smoked gouda cheese shredded
- 1 10 ounces box frozen spinach, thawed
- - parmesan cheese shredded
- - mozzarella cheese shredded
- - italian bread crumbs
- 2 bottles marinara sauce ( go to www.foodwithjackieo for my recipe)
- - olive oil
- - kosher salt
How To Make eggplant bake with chicken and orzo

Step 1Preheat oven to 350 degrees Cook orzo per directions on box Dip eggplant in milk or egg and coat with Italian breadcrumbs and fry in olive oil In a 13 x 9 casserole dish, spoon in marinara sauce Drain orzo and mix with spinach, chicken, and gouda,and kosher salt Layer eggplant over marinara in dish, spoon in orzo mixture, add more sauce, keep layering until ingredients are gone, with eggplant on top Add Mozzarella and Parmesan covering the top Cook for 30 minutes, cheese should be a little brown Serve with crusty bread and or a green salad This can easily be vegetarian, just omit the chicken.
