As a multinational gal, this French skillet dish is a favorite of mine. Along with tomatoes, onions, and mushrooms, the added tomato paste makes this dish a real winner! A simple but elegant dish for any household with ingredients you may already have on hand.

Ingredients
- 6 large chicken breast halves, skinless and boneless
- 1 large yellow onion – diced
- 1-14 ounce canned diced tomatoes
- 1/2 medium green bell pepper - diced
- 1 tablespoon garlic clove, freshly minced
- 2 tablespoons tomato paste
- 3 sprigs parsley
- 2 sprigs parsley - minced for garnish
- 1/4 cup flour
- 1/2 teaspoon salt/pepper
- 3 tablespoons fresh lemon juice
- 8 ounces fresh mushrooms - sliced
How To Make effortless chicken durango skillet dinner

Step 1Secure a nonstick tall sided skillet. Also secure a two-gallon Ziploc bag.

Step 2Add in flour to the Ziploc bag. Place in chicken breast and coat chicken by shaking in the bag. Set aside.

Step 3Add 1/3 cup of olive oil into the skillet, heating it on medium heat. Place chicken in the skillet and brown until golden, turning until chicken is totally browned on both sides.

Step 4Add in bell peppers, onion, tomato paste, diced tomatoes, mushrooms, sprigs of parsley, and lemon juice. Stir until all ingredients are softened and fragrant. Discard the parsley sprigs.

Step 5Simmer until thick then serve over prepared rice or egg noodles. Sprinkle the rest of the chopped parsley over each of the prepared dish servings.

Step 6Serve with a green salad or fruit salad.
