This is one of very few recipes I have gotten through a recipe tree,and I am glad I did! It is really simple, and makes lots.

Ingredients

  • 4 - 6 - chicken breasts, boneless and skinless
  • 1 can - black beans, rinsed & drained
  • 1 can - corn; rinsed & drained (may substitute a box of frozen corn)
  • 1 jar - salsa, chunky - your preference of "heat"

How To Make easy southwest chicken tortillas

  • Step 1
    Lay Chicken breasts in bottom of oval crocpot
  • Step 2
    Cover with beans; corn & salsa
  • Step 3
    Cook on low for 4-6 hours
  • Step 4
    When done; shred chicken with 2 forks and serve in tortillas
  • Step 5
    This is a great summer meal when you don't want to heat up the kitchen. I freeze the leftovers and make Chicken Tortilla soup out of it in the fall.
