This is one of very few recipes I have gotten through a recipe tree,and I am glad I did! It is really simple, and makes lots.

chicken breasts, boneless and skinless
1 can
black beans, rinsed & drained
1 can
corn; rinsed & drained (may substitute a box of frozen corn)
1 jar
salsa, chunky - your preference of "heat"


1Lay Chicken breasts in bottom of oval crocpot
2Cover with beans; corn & salsa
3Cook on low for 4-6 hours
4When done; shred chicken with 2 forks and serve in tortillas
5This is a great summer meal when you don't want to heat up the kitchen. I freeze the leftovers and make Chicken Tortilla soup out of it in the fall.
