Ingredients

  • 1 lb
    boneless, skinless chicken breasts
  • 2 c
    cooked rice
  • 1 can(s)
    black beans, drained and rinsed
  • 1 can(s)
    whole kernel corn, drained
  • 1 1/2 c
    mild salsa
  • 1 c
    shredded mexican blend cheese
  • 2 Tbsp
    olive oil

How to Make Easy Salsa Chicken

Step-by-Step

  1. Cut the chicken into bite-sized pieces.
  2. Heat the oil in a skillet over medium heat.
  3. Add chicken and cook until chicken is done, about 5 minutes.
  4. Drain off the excess grease.
  5. Add the rice, corn, black beans and salsa. Stir to mix well.
  6. Turn the heat to medium-low.
  7. Add the cheese, stirring to mix. Cook until the cheese is completely melted, stirring often.
  8. Serve immediately.
