Ingredients
- 1 pound boneless, skinless chicken breasts
- 2 cups cooked rice
- 1 can black beans, drained and rinsed
- 1 can whole kernel corn, drained
- 1 1/2 cups mild salsa
- 1 cup shredded mexican blend cheese
- 2 tablespoons olive oil
How To Make easy salsa chicken

Step 1Cut the chicken into bite-sized pieces.

Step 2Heat the oil in a skillet over medium heat.

Step 3Add chicken and cook until chicken is done, about 5 minutes.

Step 4Drain off the excess grease.

Step 5Add the rice, corn, black beans and salsa. Stir to mix well.

Step 6Turn the heat to medium-low.

Step 7Add the cheese, stirring to mix. Cook until the cheese is completely melted, stirring often.

Step 8Serve immediately.
