Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 2 cups cooked rice
  • 1 can black beans, drained and rinsed
  • 1 can whole kernel corn, drained
  • 1 1/2 cups mild salsa
  • 1 cup shredded mexican blend cheese
  • 2 tablespoons olive oil

How To Make easy salsa chicken

  • Step 1
    Cut the chicken into bite-sized pieces.
  • Step 2
    Heat the oil in a skillet over medium heat.
  • Step 3
    Add chicken and cook until chicken is done, about 5 minutes.
  • Step 4
    Drain off the excess grease.
  • Step 5
    Add the rice, corn, black beans and salsa. Stir to mix well.
  • Step 6
    Turn the heat to medium-low.
  • Step 7
    Add the cheese, stirring to mix. Cook until the cheese is completely melted, stirring often.
  • Step 8
    Serve immediately.
