I just picked up 1001 Short,Easy, Inexpensive Recipes today and put it to use for dinner tonight. Easy and very moist. I made it with a whole split chicken and in a 9x13-inch baking dish sprayed with cooking spray.

- 2 1/2 pounds whole chicken
- 1 - onion, peeled
- 5 tablespoons butter, melted
How To Make easy roast chicken

Step 1Preheat oven to 350' (175'C). Rinse chicken inside and out with cool water and dry with paper towels.

Step 2Place peeled onion inside chicken cavity and brush butter over chicken. Tie legs together and place in foil-lined broiler pan. Roast chicken for 20 minutes per pound. Baste often with additional butter.

Step 3Chicken is done when juices run clear.
