I just picked up 1001 Short,Easy, Inexpensive Recipes today and put it to use for dinner tonight. Easy and very moist. I made it with a whole split chicken and in a 9x13-inch baking dish sprayed with cooking spray.

Ingredients

  • 2 1/2 pounds whole chicken
  • 1 - onion, peeled
  • 5 tablespoons butter, melted

How To Make easy roast chicken

  • Step 1
    Preheat oven to 350' (175'C). Rinse chicken inside and out with cool water and dry with paper towels.
  • Step 2
    Place peeled onion inside chicken cavity and brush butter over chicken. Tie legs together and place in foil-lined broiler pan. Roast chicken for 20 minutes per pound. Baste often with additional butter.
  • Step 3
    Chicken is done when juices run clear.
