I just picked up 1001 Short,Easy, Inexpensive Recipes today and put it to use for dinner tonight. Easy and very moist. I made it with a whole split chicken and in a 9x13-inch baking dish sprayed with cooking spray.

5 Tbsp
butter, melted

How to Make Easy Roast Chicken


  • 1Preheat oven to 350' (175'C). Rinse chicken inside and out with cool water and dry with paper towels.
  • 2Place peeled onion inside chicken cavity and brush butter over chicken. Tie legs together and place in foil-lined broiler pan. Roast chicken for 20 minutes per pound. Baste often with additional butter.
  • 3Chicken is done when juices run clear.
