easy poached chicken breasts
This is the recipe that I use most often when I want to make chicken salad or need cooked chicken for a recipe. You can use as many breasts as you'd like. I usually poach 4 at a time.

Ingredients
- 2 quarts water
- 1 - carrot, cut up
- 1 - onion, cut up
- 1 stalk celery, cut up
- 3 - whole peppercorns
- 2 - whole cloves
- 2 sprigs parsley
- 4 - chicken breasts
How To Make easy poached chicken breasts

Step 1Bring 2 quarts water to boil in large saucepan.

Step 2Add carrot, onion, celery, peppercorns, cloves and parsley.

Step 3Add chicken breasts. Bring to boil again. Cover tightly, reduce heat to low and cook without lifting lid for 15 minutes.

Step 4Turn off heat and allow to cool in cooking liquid. Keep covered.

Step 5Lift chicken from liquid, remove bones and skin and use as directed in recipe.

Step 6If desired, make chicken stock with the poaching liquid. Return bones to saucepan and bring liquid to boil again.

Step 7Cover, reduce heat and let simmer 3-4 hours. Cool.
