easy plain enchiladas

My Family doesn't like All the onions, rice, and tomatoes but if yours does it is really easy to add them into this dish.

Ingredients

  • 1 pound ground beef
  • 1 pound boneless chicken
  • 1 package taco seasoning mix
  • 2 cans chicken broth
  • 1 package tortillas, i perfer the big ones.
  • 1 can enchilada sauce
  • 1 pound mexican blend shredded cheese
  • 12 ounces sour cream

How To Make easy plain enchiladas

  • Step 1
    Place Chicken into Crockpot with Chicken Broth Allow to cook for at least 6 hours on Low or 4 hours on High (remember cooking on low makes for tender meat) If you choose to you can boil your chicken in a stew pot on the stove. Until fully cooked.
  • Step 2
    Brown Ground beef, Drain, Add Taco seasoning and mix together.
  • Step 3
    Tear Chicken into shreds, add 2 tbs of sour cream for every cup of chicken (roughly)mix together
  • Step 4
    Using a casserole dish cover the bottom in a thin layer of enchilada sauce.
  • Step 5

  • Step 6
    Pour enchilada sauce over your enchiladas and cover in cheese.
  • Step 7
    Bake until cheese is melted and Enjoy :) Tip: You can use Both chicken and beef or just beef or just chicken, I perfer chicken and my husband perfers beef, so I make both.
