easy/peasy essentials: skillet chicken & veggies
You are beginning to kick back, when the doorbell suddenly rings. You check the front door camera, and see that it is two of your good friends, and you know they will want to stay for dinner. What do you do… 1. Stay real still and hope they think that you are away from home. 2. Call the police, and have them arrested for trespass. 3. Open the dang door, and figure out something quick for dinner. Okay, I did think about options 1 and 2; however, I chose 3, and this is what I made for a quick, but tasty dinner... In under 25 minutes. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 2 large chicken breasts, boneless, skinless
- 2 tablespoons sweet butter, unsalted
- 1 tablespoon olive oil, extra virgin
- 1/4 cup white wine, i chose a chardonnay
- 1 tablespoon small capers with juice
- 1 tablespoon lemon juice, freshly squeezed
- - salt, kosher variety, to taste
- - black pepper, freshly ground, to taste
- - veggies, i chose some cauliflower
- ADDITIONAL ITEMS
- - pecorino romano, freshly grated, for topping
- - lemon wedges for squeezing

Step 1PREP/PREPARE

Step 2I do not have all the photos for this recipe, and there are two very sensible reasons for this: 1. Taking photos of the process was a last-minute decision. 2. I had already polished off half a bottle of chardonnay, before I heard the doorbell ring. That is my story, and I intend to stick with it.

Step 3Gather your Ingredients (mise en place).

Step 4Cut the two chicken breasts in half, lengthwise.

Step 5Sprinkle both sides with salt and pepper.

Step 6Add the butter and olive oil to a skillet over medium heat.

Step 7Cook the breasts until they release easily from the pan, about 4 – 5 minutes.

Step 8Add the capers along with the caper juice.

Step 9Turn the breasts over, and allow to cook for an addition 3 – 4 minutes.

Step 10Add the wine, and push a wooden spoon over the bottom of the skillet, to pick up and fonds that may have developed… We love those fonds; they are like little flavor bombs.

Step 11Add the veggies (I am using cauliflower), turn the heat down to medium-low, and cover the pan, to steam, and soften the veggies.

Step 12Chef’s Note: The amount of time required to soften the veggies will depend on what veggies you choose. In my case, the cauliflower took about 5 minutes.

Step 13Remove the lid, add the lemon juice, and stir to combine with the sauce.

Step 15Slice up the chicken, and serve with the veggies, and do not forget to spoon a bit of that yummy caper sauce over the top. Then add some Pecorino Romano over the veggies, and chicken. Enjoy.
