easy indian chicken curry
This is a basic curry. You can add your own spin by adding more spice or less sugar. It's just so good.

Ingredients
- 3 tablespoons vegetable oil
- 1 large sweet onion sliced
- 1 teaspoon sugar
- 2 large tomatoes diced
- 2 tablespoons garlic paste
- 1 tablespoon ginger paste
- 2 teaspoons each coriander powder and garam masala powder
- 1 teaspoon ground cumin
- 1/2 teaspoon each red chili powder & turmeric
- 1/4 cup brown sugar
- 3 boneless skinless chicken thighs cut into bite size pieces
- 1 cup hot water
- 2 tablespoons fresh cilantro chopped
- basmati rice & naan for serving
How To Make easy indian chicken curry

Step 1Add oil to a large skillet. Add the onions and sugar and cook until caramelized. Remove the onions with a slotted spoon and let drain on paper towels. leave the oil in the pan.

Step 2Add the onions to a food processor and process into a paste. Remove and set aside. Add the tomatoes to the food processor with the ginger and garlic paste. Process until well mixed.

Step 3Add the spices & brown sugar to the tomatoes. Add the onion paste back to the skillet and stir fry over medium high heat for 3 minutes. Add the tomato mixture and cook 2 or 3 minutes until the oil begins to separate. Add the chicken pieces and the hot water.

Step 4Simmer for about 15 minutes. Top with fresh cilantro. Serve with basmati rice and naan
