Ingredients

  • 12 - potato & onion pierogies
  • 2 - chicken breasts, split, boneless and skinless
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 5 - baby onions
  • 1/4 cup sliced celery
  • 1/2 cup each julienne carrots & sliced mushrooms
  • 1/2 - bay leaf
  • 1/2 teaspoon each rosemary & thyme leaves, crushed
  • 1/2 cup diced fresh tomato
  • 1/2 tablespoon dijon mustard
  • 1/4 cup dry red wine

How To Make easy elegance dish (pierogies, chicken, etc.)

  • Step 1
    Allow pierogies to stand in HOT tap water for 5 minutes; drain. Arrange in a large oven-proof casserole sprayed with non-stick cooking spray.
  • Step 2
    Meanwhile, brown chicken in olive oil with garlic. Add onions, carrots, mushrooms, celery and seasonings; continue cooking over medium heat for 3 minutes.
  • Step 3
    Stir in tomato, mustard and wine. Spoon over pierogies. Bake at 350^ for 20 minutes.
