This is a spicy recipe! Lots of ingredients, but well worth it. I find that once I had these ingredients in my cabinet, I was able to make this recipe several times over. My family loves it, so we eat it a lot! My favorite part is that it all cooks in one single skillet. Great served over rice.

Forget takeout and make this easy and delicious Kung Pao chicken at home. There's quite a kick to it. If you're sensitive to spice, skip the chili peppers and crushed red pepper. It's full of flavor and lots of texture. We loved the crunch of the peanuts along with the broccoli, mushrooms, celery, and bell pepper. The sauce coats the chunks of chicken breast and veggies for a flavor-packed dinner. Serve over white rice.

Ingredients

  • 4 - chicken breasts, boneless and skinless
  • 2 tablespoons frying oil
  • 1/4 cup peanuts
  • 2 cups broccoli florets
  • 1 cup mushrooms, fresh sliced
  • 5 stalks scallions, sliced
  • 1 stick celery, chopped
  • 1 medium bell pepper, sliced
  • 1 clove garlic, minced
  • 1 teaspoon crushed red pepper
  • 3 - 4 small dried chili peppers
  • 1/2 cup chicken broth
  • 4 tablespoons light soy sauce
  • 2 teaspoons garlic chili paste
  • 2 teaspoons dry sherry
  • 2 teaspoons sesame oil
  • 2 teaspoons red wine vinegar
  • 3 tablespoons corn starch
  • water, if needed to thin the sauce

We added about 1 cup of water to the sauce to thin it out.
  • Brown bite-sized pieces of chicken.
    Step 1
    Cut the chicken into small pieces. Cook in oil 5-10 minutes until cooked through Set aside.
  • Brown peanuts.
    Step 2
    Add peanuts and stir-fry until lightly browned. Set aside.
  • Keep chicken and peanuts warm.
    Step 3
    Cover to keep warm.
  • Stir-fry broccoli, mushrooms, scallions, celery, bell pepper, garlic, red pepper flakes, and dried chili peppers.
    Step 4
    In the same skillet, stir-fry broccoli, mushrooms, scallions, celery, bell pepper, garlic, red pepper flakes, and dried chili peppers to desired tenderness. May need to add a bit more oil. (I use olive oil). Pan scrapings add flavor, so don't be shy.
  • Mix remaining ingredients for the Kung Pao sauce.
    Step 5
    In the meantime, make the Kung Pao sauce with the remaining ingredients. Mix well.
  • Pour sauce over vegetables.
    Step 6
    Pour over vegetables in the skillet.
  • Stir until the sauce thickens.
    Step 7
    Turn the heat up and stir until the sauce thickens.
  • Add chicken and peanuts.
    Step 8
    Reduce the heat to warm. Add chicken and top with peanuts. Serve over rice.
