I have many physical limitations that make cooking a painful but 'must do' thing some days. I love to cook easy but hearty things for my husband after a hard days work. If I am having a 'painfully hard day' a recipe like this one is easy to make and really great to eat. It is not low fat but you can cut the fat by using no fat gravy and diced potatoes if you like.
1Prep a 9x11 baking dish with caneola or Olive oil spray. Preheat oven to 325*f, allowing 10 minutes to preheat. Add tots to the bottom of the pan and place chicken breasts oven the tots, allowing space between. Lightly season breasts and pepper tots to taste. Mix gravy with a half jar of warm water and pour over the tots and chicken. Wrap with aluminum foil and place in oven. Make sure foil is tightly wrapped to keep all the moisture in the pan, not in the oven to evaporate. This dish cooks long and slow for tender chicken and the tots to absorb the flavor of the chicken. I serve with brussel sprouts and my husband does not leave his plate without a smile and a full tummy!
