easy chicken with rice

The French onion soup adds a rich underpinning to this easy chicken dish. You can also use chicken leg quarters. This basic recipe fits well in an oval 2 qt baking dish, but you can make more and put into a 13 by 9 cake pan. Just keep the liquid undiluted soup at a ratio of 2 parts soup to one part uncooked rice. I use Uncle Ben´s or Carolina parboiled rice. This was my favorite dish when I was growing up.

Ingredients
- 2 cans cream of mushroom soup, undiluted
- 1 can french onion soup, undiluted
- 2 cups rice, uncooked
- 6-8 - chicken thighs
- to taste - paprika, sweet mild
How To Make easy chicken with rice

Step 1Combine three cans of soups with two cups uncooked rice. Stir together until well mixed.

Step 2Spread rice/soup mixture evenly in bottom of two quart baking dish. Sprinkle with paprika.

Step 3Place chicken thighs on top of rice/soup mixture. Sprinkle chicken with paprika.

Step 4Cook in 350 degree preheated oven for one hour, or until chicken skins are deep golden brown and crispy.
