easy chicken n dumplings

I just love the dumplings they serve at Cracker Barrel restraunts and wanted to find something similar. My sister gave me this recipe...it sure fits the bill! So easy and so good! Sometimes I add cooked carrots and/or celery to it.

Ingredients
- DUMPLINGS
- 2 cups self-rising flour
- 1/4 cup shortening
- 1/2 cup chicken broth
- BROTH
- 2 tablespoons butter
- 1/4 cup self-rising flour
- 2 cans chicken broth (16 oz. each)
- 1/2 teaspoon pepper
- 1/2 cup milk
- 1 1/2 cups chicken, cooked and diced
How To Make easy chicken n dumplings

Step 1Cut crisco into flour until pea size. Blend in just enough chicken broth until dough leaves sides of bowl. Turn onto floured surface. Knead 2-3 times. Roll out to 1/8 inch thick. Cut into small strips.

Step 2For broth, melt butter in dutch oven. Whisk in flour. It will be thick. Gradually whisk in broth. Bring to a boil. Add dumpling strips to boiling broth. Cover and reduce heat to low. Simmer 15 min. Stir occasionally to prevent sticking. Add remaining ingredients and heat 5 min. longer.
