easy chicken enchiladas

This is real easy and yummy!! My family loves them!

Ingredients

  • 2 cups chopped cooked chicken(i use boneless chicken about 4 pieces may vary)
  • 2 cups sour cream
  • 1 can (10 3/4-ounce) can cream of chicken soup, undiluted
  • 2 cups (8 oz) shredded monterey jack cheese( us any kind you want..all the same kind or diff kinds)
  • 2 cups (8oz) shredded longhorn cheese(any kind of cheese will be fine)
  • 1 can (4oz) can chopped green chilies,drained
  • 2 tablespoons chopped onion( add as much as you want,i always add more)
  • 1/8 teaspoon salt(add any seasonings you want, i add garlic and diff seasonings)
  • 1/4 teaspoon pepper
  • 10 - (10in) flour tortillas
  • 2 tablespoons vegetable oil(how ever much u may need)
  • 1 cup (4oz) shredded longhorn cheese(any kind)

How To Make easy chicken enchiladas

  • Step 1
    combine first 9 ingredients; mix well
  • Step 2
    Fry tortillas, one at a time in 2 tablespoons oil in medium skillet 5 seconds on each side or just until tortillas are softened; add additional oil, if necessary. place on napkins to get the extra oil off.
  • Step 3
    place a heaping 1/2 cup(how ever much you think is enough) of chicken mixture on each tortilla; roll up each tortilla; and place seam side down in a 13x9x2-inch bakin dish Cover and bake at 350 degrees for 20 minutes
  • Step 4
    after 20 min. take out un cover sprinkle tortillas with 1 cup longhorn cheese(what ever kind u use) and bake additional 5 minutes un covered(until cheese is nicely melted) and SERVE AND ENJOY :)
