My Mom made this one night when I was a kid. I made it easier! You can add less or more garlic. Any kind of cheese. I also like green salsa on top!

Ingredients

  • 1
    store bought baked chicken, pulled apart
  • 1 can(s)
    cream of mushroom soup
  • 1 c
    mayonnaise
  • 1/2 Tbsp
    chopped garlic
  • 1
    juice of lemon, more if you wish
  • 1 can(s)
    green chilies, chopped
  • 6-8
    tortillas, flour
  • 2 c
    cheddar cheese, shredded. whatever kind

How to Make Easy Chicken Enchilada

Step-by-Step

  1. Shred chicken, put in bowl.
  2. Mix 1/2c. mayo, garlic and 1/2 of lemon juice.
  3. Mix, chicken and mayo mixture, spoon on to tortilla.
  4. place stuffed tortillas in a greased pan.
  5. mix mushroom soup, 1/2c. mayo, rest of lemon juice and chillies together, pour over chicken enchiladas.
  6. bake at 400 until bubbling, about 20-25 min.
  7. Sprinkle with cheese and bake until cheese melts.
