My Mom made this one night when I was a kid. I made it easier! You can add less or more garlic. Any kind of cheese. I also like green salsa on top!

store bought baked chicken, pulled apart
1 can(s)
cream of mushroom soup
1 c
mayonnaise
1/2 Tbsp
chopped garlic
1
juice of lemon, more if you wish
1 can(s)
green chilies, chopped
6-8
tortillas, flour
2 c
cheddar cheese, shredded. whatever kind

How to Make Easy Chicken Enchilada

Step-by-Step

  • 1Shred chicken, put in bowl.
  • 2Mix 1/2c. mayo, garlic and 1/2 of lemon juice.
  • 3Mix, chicken and mayo mixture, spoon on to tortilla.
  • 4place stuffed tortillas in a greased pan.
  • 5mix mushroom soup, 1/2c. mayo, rest of lemon juice and chillies together, pour over chicken enchiladas.
  • 6bake at 400 until bubbling, about 20-25 min.
  • 7Sprinkle with cheese and bake until cheese melts.
