So easy and flavorful because of the six simple spices. This is a mild chili. Add more cayenne pepper if you like it spicy. This is a family favorite!

Ingredients

  • 1 1/2 pounds chicken cutlets-cut into small pieces
  • 1 tablespoon olive oil, extra virgin
  • 1 large onion-chopped
  • 8 ounces pkg. sharp cheddar cheese-shredded
  • 1-14oz. can low sodium chicken broth
  • 1-4oz. can green chilies-chopped
  • 1-19oz. can cannellini beans-undrained
  • 1 box yellow rice-prepared according to pkg.
  • - ~~~spice blend~~~
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon cilantro, dried
  • 1/8 teaspoon cayenne pepper

How To Make easy chicken chili

  • Step 1
    Heat oil in very large saucepan over med.-high heat.
  • Step 2
    Add chicken and onions - cook for 5-10 min.
  • Step 3
    Stir in all dry spices - cook for 2 min.
  • Step 4
    Stir in broth and green chilies - simmer for 30 min.
  • Step 5
    Stir in beans - simmer for 10 min.
  • Step 6
    Mix in cheddar cheese and prepared yellow rice.
  • Step 7
    Serve warm.
