easy chicken casserole

You can put this one together very quickly and it's great for a weeknight, especially if you've cooked up your chicken in advance. I use the low sodium chicken stuffing or the cornbread stuffing. I also use light sour cream and low sodium soup. I like the addition of the rosemary, sage and pepper, but you can use poultry seasoning or any other herbs/spices that you like.

- 1 box stove top stuffing
- 6 tablespoons water
- 1 cup sour cream
- 1 can cream of chicken soup
- 2 tablespoons chopped onion
- 3 - chicken breasts, cooked and chopped
- 4 tablespoons margarine
- dash rosemary, sage, pepper
How To Make easy chicken casserole

Step 1Preheat oven to 350 degrees and lightly coat a 2 quart baking dish with non stick spray.

Step 2In a bowl, moisten 3/4 of the stuffing mix with 6 tbsp. water and spread in the bottom of the baking dish.

Step 3Combine the sour cream, soup, onions, spices and chopped chicken. Pour this mixture over the stuffing and the sprinkle the remaining stuffing mix evenly over the top. Dot with margarine and bake 40 minutes or until bubbly.
