easy chicken casserole

This is a very easy and very delicious recipe from 'The Lancaster County Cookbook', by Louise Stoltzfus and Jan Mast. The recipe doesn't call for it, but a sprinkling of finely shredded cheese added to each serving adds a wonderful finishing touch! I think it's also a very versatile recipe; instead of using tater tots, you could probably substitute refrigerated biscuits.

Ingredients

  • 2 cups diced, cooked chicken
  • 1 cup diced, raw carrots
  • 1 cup frozen peas
  • 1 cup diced onion
  • 1/2 teaspoon salt
  • 2 (10.75) ounces cans cream of chicken soup
  • 1 medium bag frozen tater tots

How To Make easy chicken casserole

  • Step 1
    Preheat oven to 350 F.
  • Step 2
    Combine all ingredients except Tater Tots; tranfer to a greased 9 X 13-inch casserole dish.
  • Step 3
    Arrange Tater Tots over top of cassrole ingredients.
  • Step 4
    Cover and bake in the preheated oven for 1 1/2 hours.
